Overworks Spontaneity is a Scottish Sour Ale made with malted barley and raw wheat, with the addition of a single variety of hops during the boiling process. The wort is transferred to the sour cellar for cooling overnight, where it ferments with wild yeast and bacteria that settle during this process. The beer has been aged in wooden barrels for twelve months. Unfiltered and with secondary fermentation in the bottle.
