Tasting Sheet PRODUCTION AND WINEMAKING Hand-picked at the exact point of ripeness. Manual destemming. Fermentation at 22 ºC with scheduled punch-downs. AGING 3 months in new French oak barrels (Allier) of 300 Liters. The rest in bottle. VISUAL Dark red color of mature cherries with clear high layer edges, with silky sensations in the mouth. OLFACTORY Well-blended red fruits with aromas acquired during the aging process that the wood provides: balsamic such as vanilla, nuts and toasted notes. TASTE Balanced and complex. Exact concentration of well-blended fruit, soft and persistent tannins. A long and glyceric breadth. PAIRING Can accompany stews and red meats, roasted pork and lamb. All types of cheeses and cured meats, grilled vegetables. It is suitable for wine tasting.
