Elaboration and Aging
Pago de Santa Cruz is made 100% from Tinta del País grapes from a vineyard with an average age of 68 years, located in the town of La Horra, Burgos, on the slopes of the Duero River, at 814 meters above sea level. It has clay-limestone soils and a continental climate. No mineral fertilizers, insecticides, or herbicides are used for its cultivation.
Winemaking by payments. Fermentation and malolactic fermentation in stainless steel tanks. Aging for 16 months in American oak barrels.
Tasting Notes of Pago de Santa Cruz
- Appearance: Pago de Santa Cruz has an intense and beautiful cherry red color, with violet tones.
- Nose: It is very complex and persistent, highlighting the maturity of the grapes with aromas of red fruit liqueur, minerals, and wood.
- Palate: It is elegant, tasty, and well-structured.
Pairing
Perfect for roasted or grilled red meats (beef, cow), large game (deer, wild boar, roe deer), and certain species of small game, such as woodcock or wood pigeon. Meat stews. Complex sauces. Aged cheeses.
It is recommended to consume this red wine at an approximate temperature of 16ºC.
