Vineyard: Average age of 35 years (the vineyard has a variable age between 25 and 40 years depending on the plot)

Making: Harvest by hand. Selection of grapes in the vineyard. Different ways of vinification to obtain maximum expressiveness and complexity, a part of the grapes is destemmed to macerate then at low temperature (11 ° C) and the other is vinified by whole bunches of well lignified stems. Alcoholic fermentation in stainless steel tanks at 17ºC for 15 days
