The Pazo Señorans Colección White Wine from Bodega Pazo Señorans presents us with this white wine from the Rías Baixas Designation of Origin, made from 100% Albariño grapes.

Production: Manual harvest in boxes, grape selection in vineyard and in cellar. Pellicular maceration in press. Traditional fermentation in stainless steel tanks at a controlled temperature of 16ºC. Aging of at least 5 months on fine lees in stainless steel tanks. Bottle aging for approximately 30 months.

Recommended serving temperature: Between 7 and 10ºC.

Bodega and vineyards of Pazo Señorans

Pazo Señorans, now converted into a winery, is a magnificent representative of the manor houses from the 16th century, built in the countryside with all the charm and nobility of past times.

The winery released its first vintage in 1989.

The vineyard is entirely made up of the native Albariño variety. It is characterized by the use of the vine as a conductive system and also by being located in different locations, but all within a radius of about 10 km, and close to the sea.

The terrain configuration is not diverse, but rather very special; it consists mainly of 'xabre' soils, resulting from the decomposition of granite rock and with great drainage capacity.

The climatic characteristics of the surroundings, combined with the soil morphology (poor, acidic, sandy, and thin), give the grapes their own characteristics of aroma and freshness.

This valley constitutes the most representative sub-zone of Rías Baixas, where the largest area of vineyards and wineries is concentrated: more than 2300 hectares, which represents 57% of the entire Designation of Origin.
