PENCAS

The stalks come from the shoots of the artichoke, whose stems are covered to grow white. They resemble the thistle but their flavor is milder and they are more tender. Its season is the winter. 

They stand out for their high content in water and fiber and because they contain few calories, carbohydrates and proteins. They also contain vitamins C and B3 and minerals such as calcium and iron. Because of their properties, they are beneficial to health because they are diuretic and depurative, help fight cholesterol and diabetes, promote digestion, hepatic and biliary function and intestinal transit.

They do not contain too many vitamins but are recommended in slimming diets, in addition they are a basic ingredient in stews and traditional dishes
