  • Rich in vitamins, minerals, and antioxidants.
  • Primarily collected from the flowers of cantueso, heather, blackberry, holm oak, and oak trees in the Sierra de Madrid (Bustarviejo).

The collection process

  • Uncapping: which consists of removing the beeswax caps that the bees have built to seal the cells, in order to preserve the precious element. A stainless steel comb and an appropriate knife are used for this purpose.
  • Honey extraction: performed by centrifugation in a radial mechanical extractor, made of stainless steel.
  • Decantation and filtering. Once this process is finished, the honey is transferred to decanters (stainless steel containers) where it remains for several days so that all impurities (waxes from extraction) naturally separate due to density differences, at room temperature. Immediately after, the honey is filtered using steel and nylon filters, and is ready for packaging.
