• Mainly collected from the flowers of cantueso, heather, blackberry, holm oaks, and oaks in the Sierra de Madrid (Bustarviejo).

The collection process

• Uncapping: which consists of removing the wax caps that bees have built to seal the cells, in order to preserve the precious substance. This is done using a stainless steel comb and an appropriate knife.
• Honey extraction: carried out by centrifugation in a radial mechanical extractor, made of stainless steel.
• Decantation and filtering: Once this process is finished, the honey is transferred to decanters (stainless steel drums), where it remains for several days so that all impurities (wax from extraction) naturally separate due to density difference, at room temperature. Immediately after, the honey is filtered using steel and nylon filters, and is ready for packaging.
