• Rich in vitamins, minerals, and antioxidants.
• Mainly collected from the flowers of cantueso, heather, blackberry, holm oaks, and oak trees in the Sierra de Madrid (Bustarviejo).

The collection process

• Uncapping: which consists of removing the beeswax caps that the bees have built to seal the cells, in order to preserve the precious element. This is done using a stainless steel comb and an appropriate knife.
• Honey extraction: carried out by centrifugation in a radial mechanical extractor made of stainless steel.
• Decantation and filtration: Once this process is finished, the honey is transferred to decanters (stainless steel drums) where it remains for several days so that all impurities (wax from the extraction process) naturally separate due to density difference at room temperature. Immediately afterwards, the honey is filtered using stainless steel and nylon filters, ready for packaging.
