This wine comes from vineyards in different plots cultivated on granitic and clayey soils in the Lugo, Galicia subzone. Viticulture is of a heroic type, that is, it is carried out at an average altitude of over 500 meters and in places with a slope greater than 30%.
The wine ferments with all its stems, maintaining maceration for a period of 2 months. Aging is done in 500-liter barrels for 12 months. It is bottled without clarification or filtration.

Castro Candaz
Castro Candaz is a joint project of winemaker and oenologist Raúl Pérez with oenologist Rodrigo Méndez in the Lugo subzone of Ribeira Sacra, using native grapes, resulting in wines with a marked Burgundian style.
Originally from Valtuille de Abajo (Bierzo) and rooted in winemaking, Raúl Pérez is today one of the greatest connoisseurs of the Mencía variety and in general of all those minority varieties that can be found in very small quantities in northern Spain. In 2014 and 2016 he was chosen in Germany and Shanghai respectively as the most influential winemaker in the world.
Rodrigo Méndez also comes from a family dedicated to wine (Albariño). After several years of work, he has become one of the most restless winemakers.
The wines are mainly made with Mencía and as is customary by both, the vinifications are very traditional, with very little extraction, seeking a style of long but very fresh wine.
