RED WINE PAGO DE LOS CAPELLANES RESERVA

The Pago de los Capellanes reserva red wine is made with tinto fino and Cabernet Sauvignon. It belongs to the Ribera del Duero D.O. After thorough monitoring, the harvest date is decided based on the grape's maturity, with the varieties being separately taken to 20,000-liter tanks for fermentation. The yield per plot is less than 5,000 kg/ha.

The fermentation process begins with a cold pre-fermentation for 6 days below 14º C, followed by a fermentation period of 30 days with bleeding and no addition of presses. The malolactic fermentation is slow and leisurely, without the addition of bacteria, at 20º for 28 days.

This wine is aged for 18 months in new French oak barrels. Afterwards, it is blended and bottled without undergoing cold treatment, clarification, or filtration. It is recommended to serve at a temperature between 16º and 18ºC.
