Tasting notes
Cherry red color, high intensity, with garnet edges in a thin layer, clean and bright.
On the nose, it is intense and complex with ripe red fruits, on a spiced background of vanilla, with toasted notes and English chocolate. Balsamic finish with a slight mineral character.
On the palate, it is ample, fresh and structured at the entrance, with a long and fleshy passage of ripe fruit and a balsamic finish. Very elegant and balanced with a long persistence.
Serving temperature: 16-18º C
Geology and Soil
Vineyards over 25 years old selected from small rainfed plots.
Poor, sandy and pebbly soils, with a clayey and calcareous background.
The climate in Ribera del Duero is Mediterranean with a predominantly continental character, an extreme climate: dry summers, long and harsh winters, low precipitation (400-500 mm/year on average) and a large thermal oscillation (from -20º to 42º C). As a result, the grape quality is extraordinary, with small size, thick skin, and perfect, slow and late ripening.
Pairing
At Made in Spain Gourmet we recommend it with semi-cured goat and sheep cheeses, white meats, game bird stews, and also with chocolate.
Production
Cold prefermentative maceration for at least 48 hours. Fermentation at controlled temperatures of 25-30ºC, with daily remontages and pumpovers, and analytical control of the evolution. Total maceration between 18-21 days. Date of devatting determined by tasting and gravity bleeding. Spontaneous malolactic fermentation at 22ºC with native bacteria. Racking and decantation by gravity to remove lees before transferring to barrels.
Aged in barrels for 12 to 14 months, with periodic fillings and rackings. 70% French oak and 30% American oak. Rest in the bottle rack for 6 months before release to the market.
