How did we do it? We implemented the "Tasty Roasted" method, maintaining hand roasting in our horizontal tray ovens. 1) We wash the nuts, add a pinch of sea salt in a carefully calculated proportion (1.5%-2%, depending on the type of nut).
2) Some of our nuts, such as in-shell pistachios, peanuts, skin-on almonds, and pecans, receive a special treatment: instead of EVOO, we add D.O.P. Pimentón de La Vera, adding a smoky touch without losing the salty flavor.
3) We place a thin and unique layer of nuts on top of the tray.
4) We hand turn all the nuts every 8 minutes until achieving a perfect crunch.
