The peppers from the region of La Vera come from the foothills of the Sierra de Gredos, in the province of Extremadura. Immediately after harvesting, they are laid out on drying floors for approximately a week and smoked over oak wood. After drying, the smoked pods, without seeds or stems, are ground into a fine red powder in mills. The grinding process is repeated up to five times to achieve the desired degree of fineness.
