It is grown in temperate climates as it does not withstand cold weather. There are many varieties of eggplants that are classified according to their shape and size into three families:
- Large oval eggplant
- Long eggplant
- Ornamental eggplant
Its season covers the months of May, June, and July.
It contains a large amount of water, fiber, if consumed with the skin, and few calories. It is rich in vitamins E, A, C1, and B2; in minerals, especially in iron, and provides carbohydrates; therefore, it is recommended to promote circulation, reduce cholesterol, and prevent arteriosclerosis. It also helps eliminate fats, promotes bile, and is antioxidant. Likewise, it is not recommended for people with heart problems.
When buying them, it is advisable to choose medium-sized, firm, shiny eggplants without blemishes on the skin.
When cooking them, it is recommended to do so immediately so as not to lose their properties; on the other hand, since they contain a large amount of water and absorb oil very well, it is advisable to soak them in a container with water and salt for half an hour and then dry them with a cloth.
