Green color, characteristic of early olive harvest, accompanied by a very intense fruity aroma on the nose, with aromas typical of olives, "tomato plant," "freshly cut grass," and "almond" as predominant scents. As it enters the mouth, the oil remains intense, not losing any of its fruity character, enhancing what was enjoyed on the nose. The passage through the throat is the most interesting part as the complexity of the oil is detected, as well as a perfect balance between its bitterness and spiciness, with a smooth and round aftertaste. The overall assessment is harmonious and pleasant.
