Vacuum packed. (Weights may vary due to production). PRODUCTION Made using a careful ancestral shepherd recipe, using only natural ingredients, without any additives: raw goat milk and animal rennet. It is matured for a minimum of six months in the cellar under high relative humidity and low temperature environmental conditions. VISUAL: Hard moldy rind with predominant whitish and light gray tones. The cut presents an ivory white pasta color, compact and firm texture, but at the same time elastic. It includes aged golden colorations that denote good refinement and may have slight isolated filtrations of penicillium roqueforti (blue veins) in areas near the rind. OLFACTORY: We appreciate a high complexity where animal aromas predominate, goat notes, cave aromas, and humidity. TASTING: Powerful entry in the mouth, the taste quickly fills the nose and mouth, filling them with complex aromas. We will notice a pleasant texture on the palate, not dry or earthy.
