DESCRIPTION | Extra virgin olive oil of superior category made from olives from olive trees registered as organic producers in the area, of the Manzanilla Cacereña variety.

REGION | North of the province of Cáceres. Regions of Sierra de Gata, Las Hurdes and Valle del Alagón (Extremadura).

ALTITUDE | 600 meters above sea level.

PRODUCTION | Limited. Olive groves cultivated in "Natura 2000 Network" areas of special environmental protection. Traditional and rain-fed farming.

VARIETY | 100% Manzanilla Cacereña

HARVESTING SYSTEM | Mainly by manual milking, and where possible, mechanically with umbrellas to prevent fruit from falling to the ground.

HARVEST PERIOD | From October 15th to November 10th.

EXTRACTION SYSTEM | Cold pressed from the first extraction and immediately after fruit harvesting.

PACKAGING | In bulk, unfiltered (to preserve its extraordinary organoleptic characteristics). Previously decanted before resting in the cellar.

STORAGE | Stainless steel tanks inertized with gaseous nitrogen.

STORAGE CONDITIONS | Protected from light.

BEST BEFORE | 18 months from bottling.
