Each grape variety, harvested 100% by hand and at its optimum ripeness, is transported quickly to the presses to avoid oxidation, arriving whole bunches and in perfect condition, is transported quickly, in boxes of 25 kgs or small trailers, to the presses, arriving whole bunches and in perfect condition. Each variety is pressed separately, gently, taking advantage only of the first pressing (the "flower must"), with careful vinification and fermentation, using our own wild yeasts
After the first fermentation, the base wine for Corpinnat is aged in 225-liter French Allier oak barrels (hence its name) for about a month. Second fermentation in bottle.
AgeingMinimum 40 months of aging in bottle. Every year the poignettage(shaking of the bottle) is performed, which causes the yeasts to remix with the wine. In this way the sparkling wine is enriched in aromas and flavors. Disgorging without the addition of sugars.
