It is the juice of olives of the Manzanilla Cacereña variety collected in the Sierra de Gata region, in the northwest of the province of Cáceres. In this area, only those fruits that meet the properties we consider essential to obtain a very high-quality Extra Virgin Olive Oil are collected. An early harvest of the olive is carried out, which allows for the production of a higher quality EVOO and ensures the preservation of its organoleptic properties.
Only through this selection system, can we guarantee our customers an Extra Virgin Olive Oil of which we are completely sure about its quality.
The Manzanilla Cacereña is the most prominent variety of the Gata-Hurdes PDO and is mainly found, almost exclusively, in the north of Cáceres.
It is made 100% with Manzanilla Cacereña olives, creating one of the best EVOOs due to its high oleic acid content of 78-80% compared to other EVOOs, which concentrate between 55% and 80%.
Furthermore, it offers a very balanced taste between spicy, sweet, and bitter. And given the characteristics of this variety of olives, which have a low fat yield for oil production, its process faces a higher cost compared to other varieties.
The Manzanilla Cacereña EVOO, besides being the most distinctive EVOO from the north of Extremadura, is a versatile variety, ideal for all kinds of culinary preparations.
