Cultivation
The grape variety used is Mencía, from vineyards of small estates of local winegrowers in the towns of Rubiá, a Rúa, Petín and O Bolo, located on slopes of slate soil, at an average altitude of 500 meters and various orientations. Manual harvest, fermentation with indigenous yeasts and malolactic fermentation in stainless steel tanks.
The vines are between 10 and 30 years old. They are characterized by a colluvial soil, with little depth, derived from the weathering of black slate rock.

Making
The grapes are harvested by hand in 20 kg crates, transported quickly to the winery and sorted on a sorting table.

Finally, it is aged for 9 months in steel tanks with periodic racking.
