This White Wine Viore Verdejo On Lees is made with grapes from a plot called "Los Tordos", located in the Rueda area. This is a two-hectare vineyard located at the top of a hillside at an altitude of 770 meters. Its soils are poor and not very fertile which causes a naturally reduced vineyard yield and where the clay-limestone profile with abundant boulders on the surface which sets aside the minerality in the wines. These vineyards are flanked by pinare and a diversity of herbs and flowers that provide a balsamic character.
For winemaking, the Verdejo grapes are harvested very early in the morning and later in the day to provide a higher alcohol content that will bring complexity and character to the wine.
