Vino Blanco Cau dels Penitents is produced in the vineyards of La Freixeneda; here the climate is Mediterranean, with average annual rainfall. The estate, located in Alt Penedés, has over 200 hectares of vineyards, where sustainable viticulture is practiced. There is minimal intervention in their vineyards, which are spread across different parts between 350 and 715 meters in altitude. El Vino Blanco Cau dels Penitents is fermented and aged in 500-liter acacia barrels for 12 months with its lees. The second vintage of this wine was affected by a heatwave, forcing them to reduce the harvest by 35%, selecting only the most balanced grapes. Only 1800 bottles of wine were produced.
