The resulting must underwent a 24-hour static settling process before starting fermentation with selected indigenous yeasts from the vineyard. A portion of the wine, around 30%, was introduced into 500-liter French oak barrels, while the rest remained in tanks. The lees were kept in suspension for 7 months, with manual batonnage in the barrels to enrich the wine.
After this process, a blend of both aging profiles was made to achieve the desired flavor profile. Then, the wine was clarified and bottled, continuing its aging in the bottle for approximately an additional 8-12 months before being released on the market.
