Geology and Soil

The grapes used in this wine come from a 9 Ha plot located in a privileged area at 750 meters above sea level.

Brown soils, rich in calcium and magnesium, easy to work and rocky with good aeration and drainage, and limestone outcrops at higher elevations. Permeable and healthy, with a texture ranging from sandy-loamy. The pH of the soil ranges from 7 to 8. This geological substrate has evolved on the surface to brown soils on stony allochthonous deposits, giving rise to the typical "gravelly" soils with good drainage.

The temperature difference between day and night is the secret to its flavor, as the sugar gained from the sun is balanced with the acidity retained during the cool nights. The vines can withstand up to 2,600 hours of sunlight annually, an amount that would be excessive if not for the late ripening of its grapes. Due to its latitude, the Rueda Designation of Origin would be located in the Mediterranean region, but due to its altitude between 700 and 800 m, and with rainfall rarely exceeding 500 liters per year, it is considered to have a continental influence.

Production

The grapes are harvested through selective harvesting, always at night, and are macerated for 10 hours at low temperature before being pneumatically pressed. To preserve all the aromas that this variety contributes, the alcoholic fermentation also takes place at low temperature. Aging is done in the bottle.

Pairing

At Made in Spain Gourmet, we recommend it with mussels like those from Bou de Vara and Conservas Nosa, prawns, oysters. It is perfect for appetizers and pairs perfectly with rice dishes like those from Dehesa de la Albufera and fish. Semi-cured sheep cheeses from Calaveruela and Quesería 1605, as well as vegan cheeses like those from Veggie Karma.

Rueda Designation of Origin

The Rueda Designation of Origin was recognized on January 12, 1980 by order of the Ministry of Agriculture, being the first Designation of Origin recognized in the Autonomous Community of Castilla y León, after several years of work for the recognition and protection of its native variety: Verdejo.

"The area covered by the Rueda Designation of Origin specializes in the production of white wines."

The Rueda Designation of Origin has very favorable natural resources for the production of high-quality wines, being an area specialized in the production of white wines, with broad international recognition. Additionally, since August 5, 2008, red and rosé wines have also been protected by the Rueda Designation of Origin.

The production area covered by the Rueda Designation of Origin is located in the Castilla y León region and is made up of 74 municipalities, with 53 located south of the province of Valladolid, 17 west of Segovia, and 4 north of Ávila.

The different grape varieties cultivated are distributed irregularly across the various municipalities that make up the Rueda Designation of Origin. However, the vineyard reaches its highest concentration and intensity in the municipalities of La Seca, Rueda, and Serrada. It is the Verdejo vineyard that occupies the largest area.

The Verdejo grape has been present in the Rueda Designation of Origin for more than ten centuries. Its character is determined by its aroma and flavor, with hints of underbrush, fruity notes, and excellent acidity.

The extract, a personality factor of great white wines, is noticeable
