Speltorspelt(Triticum spelta), also known as greater spelt or greater spelt, has been documented as far back as 10,000 years ago in archaeological sites in the Middle East. It has been cultivated since the Middle Ages in the Iberian Peninsula and other regions of Europe

Since the beginning of the 20th century there has been a hybridization of spelt, with spelt and large spelt being mixed with normal wheat and durum wheat. Following extensive research, carried out at the German University of Garching, Germany, by Dr. Herbert Wieser, Ph. Herbert Wieser, a 1996 study on 24 varieties of spelt grown in Germany, concluded that only 4 of those varieties of large spelt can be said to be pure unhybridized and therefore retain all the genuine qualities of spelt.
